A juicy anecdote about Nancy
The rum baba owes its origins to Stanislas Leszczynski, a former King of Poland who became a Duke of Lorraine in Nancy. He started to find that his kouglof (Polish cake) was too dry, so his pastry chef decided to solve the problem by soaking it in sweet fortified Malaga wine to make it softer, and adding crème pâtissière and Corinthian raisins to the mix. The recipe was preserved, with rum replacing the wine over time.
